Ingredients

  • 2 tbsp. olive oil
  • 1 fennel bulb
  • 1 onion
  • 4 cloves of garlic
  • 1oz tomato paste
  • 16oz canned crushed tomatoes
  • 32oz carton vegetable broth
  • 2 bay leaves
  • 1 tbsp. salt
  • 1 pound mussels
  • 1 pound clams
  • 2 filet of Mahi Mahi
  • ½ pound of shrimp
  • ½ pound of scallops
  • 1oz chopped flat leave parsley

Instructions

  1. Chopped fennel, onions and mince garlic. In large pot heat olive oil to medium high heat and add fennel onions and garlic. Cook for 1 minute and add tomato paste, crushed tomatoes, vegetable broth, bay leaf and salt. Simmer for 20 minutes.
  2. The add clams, mussels, shrimp, cubed Mahi Mahi and scallops.
  3. Simmer for another 5-7 minutes and top with parsley.
  4. Serve with toasted bread.
